What are the ingredients?

Parmesan Crusted Potatoes are made with just 6 ingredients, plus cooking spray, salt, and pepper!

  • Cooking spray – We recommend avocado oil spray
  • Small Yukon gold potatoes – may substitute honey hold or small yellow potatoes. While we prefer yellow or Yukon gold potatoes, you can also use baby red potatoes or small russet potatoes
  • Melted butter – may substitute olive oil but the flavor profile will be slightly different and the potatoes may no get as golden brown
  • Garlic powder, onion powder, and dried dill – may substitute Italian seasoning for the dill
  • Fine salt and black pepper
  • Parmesan cheese – we like to use finely shredded parmesan cheese, but grated Parmesan also works
  • Optional garnish: fresh parsley, chives, or oregano, and flakey sea salt

How to make Oven Baked Crispy Parmesan Potatoes

With a prep time of just 10 minutes and cook time of 22-25 minutes, this potato recipe comes together fast.

  1. Preheat the oven and spray a large baking dish with cooking spray. Note you could also use a rimmed baking pan or baking sheet
  2. Combine all of the ingredients. In the prepared baking dish, add the melted butter, seasonings, Parmesan cheese and halved yellow baby potatoes to the dish. With your hands, toss the potatoes in the seasoned Parmesan mixture to coat well. Arrange the potatoes cut-side down.
  3. Bake the potatoes. Place the baking dish in the oven and bake for 22 – 25 minutes or until potatoes are golden brown and tender when pierced with a fork. Allow potatoes to cool for 5 minutes before transferring to a serving dish or large bowl. You can also serve them right from the baking dish.
  4. Garnish and serve: Sprinkle fresh parsley or chives and flaky sea salt, if desired. Serve with ranch or sour cream for dipping.

How to store leftovers: Store leftover in an airtight container in the fridge for up to 4 days. Reheat in the microwave or better yet the stovetop to help the potatoes crisp up again.

  • For the best results, use small baby potatoes. I like to use honey gold potatoes or small Yukon gold potatoes since they have the creamiest inside and they crisp up nicely. You can also use baby red potatoes (like we do in our ranch roasted potatoes) or small russet potatoes. If the potatoes you have are large, you can quarter them.
  • Secondly, make sure you coat the potatoes well and even press the Parmesan mixture onto the potatoes with your hands. I like to make sure each potato half has the mixture pressed onto all sides, and especially on the cut side, before baking.

  • Cooking spray
  • 1 ½ lbs honey gold or small Yukon gold potatoes, halved if large
  • 3 tablespoons butter, melted (may substitute 2 1/2 tablespoons olive oil or avocado oil)

Yes, olive oil or avocado oil can be substitute for the melted butter in this recipe. Instead of 3 tablespoons melted butter we suggest reducing the amount to 2 1/2 tablespoons olive oil or avocado oil.
